Creations Rainbow Cake

Serves: 1 four-layer cake (about 20 slices)

A feast of colour and taste, this show-stopping cake is light and moist, perfect for any celebration.

Ingredients

For the cake

3  extra large eggs

180ml cooking oil

180ml water

540g Snowflake Creations Rainbow Cake Mix

4  colour mixes

For the icing

150g butter/white baking margarine, softened

300g white icing mix

30ml milk

Method

  • First bake the cake...
  • Preheat oven to 180°C
  • Beat eggs, oil and water with an electric mixer for about 30 seconds on slow speed until smooth and a light creamy colour, then add cake mix
  • Beat batter with an electric mixer for about 30 seconds on slow speed until incorporated, then about 4 minutes on high speed
  • Divide batter into 4 separate mixing bowls
  • Add a different colour mix to each batter and beat each with an electric mixer for about 30 seconds, rinsing the beaters well between colours
  • Grease 4 x 20 cm round cake tins and pour each coloured batter into its own tin
  • Place tins into oven and bake for 10 minutes until baked through
  • Cool cakes completely before icing
  • ... then make the icing
  • Beat the softened butter/white baking margarine with an electric mixer for about 1 minute on high speed until creamy
  • Add icing to creamed butter/ white baking margarine and beat on slow speed until the mixture resembles breadcrumbs
  • Add the milk and beat for about 2 minutes on high speed or until creamy
  • Ice the blue layer of the cake, followed by icing the green, yellow and pink layers
